Every iteration of the matrix prior to the one we see in the films, the One is said to have chosen to select a group of survivors to start a new Zion. The matrix is then rebooted, and the cycle begins anew.
Question is - so at the time that Neo is freed, might the previous "the One" be still alive? If not, would there not be a record of him/her -- a legend / myth? How much time passes between each reboot, anyway?

I was talking with some people on Reddit about this. I think I said something to the effect that the previous One passes away (We don't know how).
So Morpheus' quote goes something like "When the Matrix was built, there was a man born inside who had the ability to change things, remake the matrix how he saw fit. It was he who freed the first of us, taught us the truth. when he died, the Oracle prophecized his return. That his coming would hail the descruction of the Matrix, free our people. There are those of us who have spent our lives searching for him...
So, what we know is that Neo is a copper top, born inside the matrix and after having been freed and trained by Morpheus, he had the ability to change the matrix, like stopping bullets and flight. We also know that the previous Ones chose to reload the matrix and select 23 individuals. They freed the first of them (first for that new version of the matrix) and taught them the truth; set the continuation of the war. Again, we don't know how he dies, but each version of the Matrix lasts for about 100 years before the One reloads it, or in this case, does not reload it. He pursues the destruction of the Matrix; well, it's debatable what he pursued after choosing trinity. I personally think there is more likely he persued destroying the matrix or at least taking it offline. And that the reason he didn't let Smith destroy the matrix was to save all the humans and "Punt".
To answer your other part of the question, I think that, Yes, there is record and myth of the previous One. I can't recall anything other than Morpheus' message about him. But the Oracle pushing the narrative of the One.
